Sultans’ Dinner-Fell Like A Sultan

A Signature Dish-Experience the Unique Presentation

The Testi Lamb Casserole dish is an authentic recipe from the Ottoman Empire. Uniquely presented, it has special cooking and serving technique. Prepared in a clay pot, handcrafted in Kavak/Kavak Comlek in Avanos-Nevsehir, made of red mud, a special type of mud unique for this region.
A slow cooking method was used to tenderize the meat and this dish was usually prepared for the Ottoman Sultans. Its main ingredients are lean lamb shoulder, tomato sauce, wild mushrooms, shallot garlic cloves, green pepper, young potatoes, and vegetable stock. The ingredients are put in clay and covered with aluminum foil, baked in an oven for 100 minutes. Then a special sealing dough is made to cover the pot. When the dish is ready, the staff breaks open the pot by knocking it with a special copper handle in front of the guest. The dish can be prepared in variants with fish, vegetables, and even sweets if desired.
